Meet Jason Moldan, our new owner and chocolatier

Jason’s path to fine chocolate was anything but ordinary. After retiring as a Sergeant Major in the U.S. Army Reserve and decades in technology leadership, he traded spreadsheets and combat boots for caramels and chocolate.

What began as a creative outlet during COVID quickly grew into a passion — experimenting with flavors, mastering techniques, and finding joy in turning chocolate into edible art. Jason refined his craft at The Minnesota Chocolate Lab, through small-batch seasonal production, and by teaching at Cooks of Crocus Hill. His chocolates reflect both precision and playfulness — polished artisan creations full of surprising, whimsical flavor combinations.

Inspired by St. Croix Chocolate founder Robyn Dochterman’s award‑winning vision, Jason is honored to carry on the company’s mission: crafting beautiful, memorable artisan chocolates while building community and delighting guests who visit the shop.

It’s a privilege to continue a tradition of creating artisan chocolates that are as beautiful as they are delicious — blending fine art with culinary craft, and adding my own spark of curiosity and playful creativity along the way."

Jason will be at the shop for meet and greet opportunities Sept. 6 from 12 to 2 pm and Sept. 18 from 11 am to 1 pm.
